BAKING & CAKE DECORATING

PIPING TECHNIQUES

In this three hour class, students will learn all the technical aspects of cake decorating techniques such as: correct use of pastry bags, different ways to create star borders, shell borders, rosette borders, zigzag borders, inverse borders, and braided borders.

SPATULA TECHNIQUES

​In this three hour class, students learn different spatula techniques to apply icing on your cakes. You’ll also learn how to create designs using a pastry bag. Students will also learn about the tools and techniques for leveling, using a serrated knife, cake levelers, fillings, and crumb coat.

CUPCAKE DECORATING

Students will learn how to decorate cupcakes with fondant and gumpaste. We'll also learn how to make a rosette design on top of the cupcake using a pastry tip and pastry bag. Students can take their beautiful cupcakes home with them.

CHOCOLATE & VANILLA WORKSHOP

In this three hour class, students learn all the technical aspects of baking and measuring ingredients. Students will also learn how to elaborate a very moist vanilla cake, cupcakes, blackout chocolate cake, vanilla buttercream icing, and chocolate and mocha filling.

DOMINICAN CAKES I

Learn how to make a delicious Dominican cake. In this three hour class, students will learn how to make two different versions of this famous cake. We'll also learn how to make blueberry cake, marble cake, mocha cake, amaretto cake, Piña Colada cake. pineapple cake, strawberry cake, as well as learning the entire secret to elaborate the meringue icing.

DOMINICAN CAKES II

Learn how to make a delicious Vanilla Dominican cake. In this three hour class the student will learn how to make a Black Fruit Cake, Pineapple Upside-Down Cake, Orange Cupcakes, as well as pineapple, strawberry, and dulce de leche filling. Also learn the entire secret to the elaborate meringue icing and Italian buttercream.

INTRO TO FONDANT TECHNIQUES

In this two day workshop, you’ll learn all the technical secrets to roll out fondant and cover a cake using this sugar paste. Students will also learn how to use gum paste and fondant to create different designs. For this workshop, we will provide an 8”x 8” square cake cover with buttercream icing.

GUM PASTE FLOWERS

​In this three day workshop, students will learn how to create a very quick and simple gum paste mixture to create peony, rose, rose bud, calla lily, and foliages. We'll also learn how to add color to the paste, how to roll it out and cut it, and how to create shapes using various techniques. Lastly, students will learn how to use color dust to paint flowers.

TIER CAKE WORKSHOP

In this three hour workshop, students will learn how to build beautiful cakes for Weddings, Sweet Sixteen's or Anniversaries. We'll learn the correct way to create tiers, using dowels and columns for classic and modern designs. Students will create designs using royal icing, gum paste, and fondant. We will also learn how to create flower arrangements for decorating the cakes.
